Hi, I’m Jacinta. 

Simply Jacinta is my way to help people love themselves by sharing tips on eating healthier, exercising more, taking time to enjoy the simple things in life: nature, food, and movement.

 

Gaeilge go Deo is my way of sharing my love of the Irish language and helping others who may wish to learn the Irish language. I teach online classes via Zoom and share resources here.

 

Simply Yoga is my way to help people learn to love and accept their bodies through gentle movement, yoga, breathwork, mindfulness, and meditation.

 

 

 

 

My Story

As a mom of two boys, I struggled to balance a full-time job, parenting, home life, self-care, and time for my interests. Trying to be plant-based in a house full of carnivores was a challenge.  Life was just too crazy at times. Diet, exercise, and self-care always seemed to be the last thing on the list. I love to exercise but the consistency was a struggle. I had an extra 10-20lbs that would come and go but never stay gone for good. I exercised but never was as consistent as I wanted to be. I was too exhausted or busy at the end of the day to find time to cook the healthy meals I wanted to.  I had little time for music, dance, reading, Irish, French, piano etc. I wanted to do more and learn more than I ever had time for.

Over the years I learned ways to simplify life and make it all work. My plant-based journey has evolved to a point where it is just second nature. I no longer dread the thought of dinner time and the proverbial question “What’s for dinner?”. I’ve developed habits and hacks, from menu planning, batch cooking, meal prepping, using technology to my advantage so I now eat healthier than ever. I managed to lose and keep off 20+lbs and now weigh the same as I did in junior high. I have less stress, and more time for the fun stuff.
